This is a classic Italian side dish that is often served at holiday meals. The tomato sauce is the same as my basic homemade tomato sauce, just made with different tomatoes. Feel free to substitute cherry or grape tomatoes if those look better at the store. For an extra kick, add 1 tsp of red pepper flakes. Sauteed Green Beans with Fresh Tomatoes
Serves 4
¾ – 1 lb green beans, cleaned and trimmed
6 medium tomatoes (I used tomatoes on the vine)
½ cup basil leaves, left whole (approximately 4-5 large leaves)
¼ cup extra virgin olive oil
2 tsp salt
1 tsp black pepper
1 beef boullion cube
½ Tbsp. sugar
Quarter the tomatoes and add to a large pan with deep sides and a lid.
Add the rest of the ingredients and bring to a boil over medium high heat.
Cook over medium high heat for 5-7 minutes, then reduce to medium low heat.
Cook for 30 minutes, allowing the tomatoes to keep a slight boil (there will be a lot of extra liquid, which you want to boil down and reduce).
Meanwhile, boil the green beans in salted water until they are cooked halfway through, approximately 5-6 minutes.
Add the green beans to the tomato sauce and stir to combine.
Cook the green beans and tomato sauce together for 5-10 minutes.
Serve warm or at room temperature.
