Brown Sugar Chicken Bites

  • 1 cup light brown sugar
  • 1 ½ Tbsp. chili powder
  • ½ tsp. cayenne (this gives you a mild-medium spiciness – double this if you like your food very spicy!)
  • 8 oz bacon
  • 1 – 1½ lb. boneless, skinless chicken tenderloins (alternatively, you could use chicken breast and cut it into 2-3 inch pieces)
  • Toothpicks (optional)
  1. Preheat oven to 400 degrees.
  2. In a large shallow plate or bowl, mix the brown sugar, chili powder, and cayenne; set aside.
  3. Cut the bacon slices in half and set aside.
  4. Cut each chicken tender into 3 pieces, approximately 2-3 inches per piece. Set aside.
  5. Coat a baking sheet with foil and cooking spray (this step is important because the sugar will caramelize when the chicken is cooking and without the spray, the bites will be nearly impossible to remove from the baking sheet).
  6. Assemble the chicken bites: Wrap each piece of chicken with a strip of bacon and secure with a toothpick. Roll the chicken in the brown sugar mixture and set on the baking sheet.
  7. Note – I’ve made these both with and without the toothpicks, and it works either way. If you’re planning on serving them as finger food, I would recommend keeping the toothpick. But as long as you place them seam side down on the baking sheet, they shouldn’t fall apart even without the toothpick.
  8. Bake at 400 degrees for 15-20 minutes. Then, broil for 5 minutes to crisp the bacon.
  9. Enjoy (and try not to eat the whole tray by yourself)!
